Three Cheese Herb & Crabmeat Puff

2 TBsp. margarine
1 cup Egg Beaters (or 4 eggs)
2 cups low-fat cottage cheese
1/2 cup low-fat cheese such a Gouda, Swiss or Monterey Jack, grated
2 oz. low-fat cream cheese
1 TBsp or more mixture of herbs such a chives, oregano & dill
1/2 cup chopped crabmeat
Fresh tomato wedges for garnish

Preheat oven to 350 degrees. Spray two 4 oz. ramekins with non-stick vegetable coating.
In blender, whirl together margarine, eggs, cheeses and herbs until smooth and creamy. Mix in crabmeat. Pour mixture into remekins, leaving half an inch or so of space to allow for mixture to rise.
Bake for 30 minutes or until egg is puffed and golden. Garnish with tomato wednes before serving.
Yield: 2 servings
NOTE: Great for lunch, brunch or dinner too!
